Hamburger Patties

Hamburger Patties. These wonderful moist hamburgers are brought to you from one of my favourite cooks, Tessa Kiros and her lovely book Apples for Jam. These burgers contain bread soaked in milk, which may sound strange but gives them a nice moist consistency. My wife in fact thought they were undercooked as they were so soft, until I mentioned about the soft bread. They are very tasty and very simple. Kids will love them too.

To make 6-8 patties, soak 4 slices of bread in 125ml or so of milk. Scrunch the bread up with your fingers so that it breaks down. Then put 250g each of pork mince and beef mince into a bowl. Add some chopped parsley and a good sprinkling of salt and pepper and then add the milky bread. Mix all this together with your hands until combined. Tear off 6 to 8 lumps and flatten to form a hamburger shape. Fry on a medium heat until browned on the outside and cooked in the middle. Put them all on a plate. Cut a whole lemon and squeeze the juice into a jar and add a couple of tablespoons of olive oil and some salt. Put the lid on the jar and give a vigorous shake and then pour the contents over the patties. I served these simply with some minty peas but you can serve them however you like!
